The BEST Scratch Peppermint Brownies EVER!!

I LOVE chewy, gooey brownies....like the family size Pillsbury box ones......but I dislike having to make anything from a box.

I always wonder just exactly WHAT is in that box??? Plus most things from a box are loaded with preservatives and sodium. So.....I make almost EVERYTHING from scratch.

{{When I say almost everything, the only thing I haven’t found a scratch recipe for that I like, is Pillsbury white cake mix. This box makes THE BEST birthday cake....after I doctor it a little😜so if anyone has a comparable scratch recipe, send it to me!!!! I am always open to try a new one!!}}

So, this recipe is super simple, with basic ingredients most of us have on the shelf (if you are a traditional baker that is). Of course I like to spruce them up with some oils!! You can tweek them to your liking....omit the baking powder if you want them chewier, add more than it calls for if you want them more cake like. I omit the powder because I love them gooey!!

I add 8 drops of Young Living Peppermint Vitality Essential Oil to give them a kick!! Other Vitality oils I think would be yummy are orange, lime, spearmint, cinnamon bark, black pepper, nutmeg, or even some citrus fresh. Depending on the time of year, the possibilities are endless!!

I also use Dark Cocoa......because the darker the chocolate, the better in my book!!

The dry ingredients can be mixed and stored in a plastic storage bag or quart jar for several months. Then add the wet ingredients, mix and bake. So it’s like you have your own box of mix on the shelf!

This recipe is quick and easy to make, I hope you’ll keep it in your recipe box and it becomes a favorite in your home!

The Best Scratch Peppermint Brownies Ever

2 c. Sugar

1 c. Flour

2/3 c. Cocoa (I use Dark Cocoa)

1/2 t. Salt

1/2 t. Baking Powder (I omit)

4 Eggs

1 c. Oil (I use Canola, but I think Coconut would be good too)

2 t. Vanilla

8 drops Young Living Peppermint Vitality Essential Oil

Mix dry ingredients together. Whisk the eggs. Add to the dry ingredients along with oil, vanilla and essential oil. Mix just until combined. Pour into a greased 9x13 pan and bake for 30-35 minutes. Enjoy!
